Mama Gie was established by the late Alfredo Costales and Virginia “Mama Gie” Costales. While most of their regular customers were students from a nearby medical school and medical representatives, students from other universities in the city would make an effort to reach the place just to satisfy their craving for the pancit palabok and the arroz caldo paired with tokwa’t baboy of Mama Gie. Since the snack counter only had twenty seats, it would quickly fill up when lunchtime comes. After capturing the refined taste of Cebuanos, Mama Gie started to offer other Kapampangan dishes, including the Callos, Kare-Kare, Kalderetang Kapampangan, and Menudo Rice, among others. The client base of the snack counter increased as it started offering packaged meals for lunch and dinner. Aside from the Cebuanos, Mama Gie also counted on fellow Kapampangans and Ilokanos as well as Tagalogs studying or working at the city among its loyal customers.
