The adobo is a popular Filipino dish everybody loves. The term adobo is a Spanish word that means marinade or sauce. The Filipino adobo involves cooking meat, particularly pork or chicken, that is marinated in soy sauce, vinegar and garlic. The meat is browned in oil and simmered using the marinade.  It is so popular that is considered as the unofficial national dish of the Philippines.
